Hi Everyone,

In my never ending quest to find great ideas for gluten free foods, and
lunch box ideas, I have learned,  NEVER underestimate where you might find
some great ideas.

 

This month's issue of Cooking Light (Sept 2013), has some suggestions for
Bento boxes. (I had never heard of it, til I read the issue). Apparently,
"bento box culture is from Japan and has been inspiring lunch box creativity
on this side of the Pacific".  The concept is simple, a small container for
each food item, which then helps with portion control and a visual prompt
for balancing a diet.  As a food storage container hoarder, from Tupperware
to Sterlite, to Rubbermaid, this fits right up my alley.

 

The Cooking Light issue has several recipes that include quinoa, hummus and
a variety of salads. It also includes ideas for making your own crackers
(substitute flour mix, and I would use Carol Fenster's Sorghum flour, as I
find it very versatile- but use what works for you!).  Many suggestions were
gluten free, but others will need to be tweaked to make them GF.

 

I also would recommend parents with small children headed off to school, I
have found the Pack-It lunch box which, folds flat, and stores in the
freezer- the inside becomes frozen, to which packing a lunch stays cool all
day long. The company professes that the insulated lunch box keeps cool for
up to 10 hours, which I have   to agree with. The only exception being, that
if it's in the glaring sun, it does fade faster, but in a cubby or cubicle
or locker, this lunch box does the trick for us.  Google "Pack -it",  to
find it online, or I have also seen them sold at Bed, Bath and Beyond.  

 

The September issue of Cooking Light, advertises some Minute Rice,
individual serving sizes "ready to go".. people may also be helpful. There
are several flavors that are gluten free, and I  found the  allergen
information listed on the website. This may be a better suggestion for high
school kids, or college kids that have access to microwaves.. but it makes
meals a little easier when on the run.. 

 

I have no financial interest in any of the companies listed above, but
wanted to share my findings, as I hope those of you new to this diet, find
the information helpful, and to those of us doing this awhile, I always
enjoy a new idea.
