You are probably lactose intolerant.  From what I have read, celiacs
generally are.  I'm wheat, rice and lactose intolerant.  The lactose in the
cheese probably caused your reactions.  I just had 4 cheese and mushroom corn
tortillas, and even though i took lactaid caplets before i ate, i now have
pressure in my head over my eyes.  it's getting hard to keep them open.  So
that could be one cause.
