Well, the response was mixed.  Two people definitely said it was a "no no",
the rest either said OK, or that they had eaten there with no problems.

"We don't have any dish, in its original form, that is completely
gluten-free.  I've copied Kimberly Heloin, our nutritional guru, she may be
able to elaborate.  Thanks for thinking of us!"

"I checked with the local Noodles & Company a year os so ago because their
menu looked pretty safe to me, and discovered that the vegetable broth that
they use in EVERYTHING contains gluten.  It was quite a disappointment."

"Noodles & Co. is based here in Colorado so I was able to speak to thier
representative by phone.  You have to request the rice noodles (no big deal,
they expect this.) but I was assured that their spaghetti marinara, their
parmesan butter and their pesto sauce is gluten free.   They seem to be very
open to this sort of enquiry, so ask whatever you need in the restaurant.
All in all a very good restaurant experience.  Enjoy!"

"Noodles & Company is great! .. I asked the server about it and she told me
that any time I went into the restaurant I could request that they use a
clean pan to prepare my food.  I have since been in there 3 times and asked
for a clean pan every time without so much as a strange look.  They have
always been more than helpful.  Plus the pad thai is extremely yummy! I also
hear that if you ask they will substitute any dish on the menu with rice
noodles."

"They will put any fo the sauces you want on them (rice noodles). I have
eaten there frequently without any personal problems."

cheese with rice noodles and did not have any problems"

I guess, like most others, this is a personal decision the individual has to
make.  What are we prepared to risk?  How much of what companies say is to
protect themselves from possible litigation? I think "we" are going to try
it.  If there is a problem, I'll let you all know.
