Hear is a response I received from Legal Seafood regarding soaking mussels in 
flour to get sand out.  I actually go to the one on Long Island, they are 
very celiac friendly.  South Shore Plaza on Rte 110  ( Huntington, I think?)


Dear Ms. Butzer:

Thank you for writing.  We're pleased you enjoyed yourselves at our
restaurant.  As you learned, allergies are of great concern to us
at Legal Sea Foods and, once our management team is aware of an allergy
situation, we go out of our way to ensure our Guests dine with confidence.

I spoke with our Executive Chef, Rich Vellante, and he guarantees that our
Mussels are not soaked in flour prior to being prepared for consumption.  I
hope this information is helpful.

The following restaurant guest service form has been submitted.


Restaurant location: South Shore Plaza
Comments: We love Legal Seafood and your Long Island restaurant has been
very accommodating to our Gluten Free daughter.  She has Celiac Disease
and the manager was quite helpful over the phone and in person.  She loves
mussels and has had them several times at your restaurant.  Question:  on
our Celiac Email Network it was stated that mussels are sometimes soaked
in flour to pull the sand out.  Would this be true??  This would make them
not available to alot of people.Celiac disease strikes 1 in 133 people in
US, and also wheat is a top ten allergen.  Please say it isn't so!  I am
not just asking Legal Seafood, but rather the seafood industry.  Thank you
for a response.  We are anxious for the Short Hills location to open up
since we are only visitors to Long Island.
