Thanks for all of the replies to my question (which is below).

Several respondents said "older" ceilings may contain asbestos.  Most
didn't say how old, and those who did varied widely.  Many suggested
having it tested.

About half of the respondents didn't think the ceilings were likely to
contain gluten, the other half said that joint compound (which is
sometimes used to texturize ceilings) does contain gluten.

A couple of replies suggested that the ceilings should be painted, if they
aren't already (ours are not), and one person was kind enough to send
painting advice.

Several respondents mentioned having cd symptoms from contact with joint
compound.

Are textured ceilings gluten and casein free?  The house we live in is
constantly showering us with a fine powder from the textured ceilings.
