I just found another celiac-friendly hotel/restaurant in Chicago. I had dinner at 
the W Hotel restaurant in the Chicago loop on Adams (not the one near the 
Lake).  I talked to the sous chef, Matthew, who has several food alergies 
himself, and he was extremely helpful.  The steaks come cryovac sealed to 
the restaurant without any marinade (not sure about other meat) and they 
can prepare it any way that we feel comfortable with.  The risoto is also made 
completely by hand. They even make their own vegetable broth with only 
fresh veggies and fresh (not dried) herbs.  He even said that if we advise the 
chef that we have Celiac, they will clear off an entire area and run all of the 
dishes and utensils (including the mandolin that they chop the veggies with) 
through the super hot dishwasher before preparing anything.  Matthew 
seemed completely on top of everything!
