When I lived in Tennessee I absolutely loved Cracker Barrel's Hashbrown Casserole. I have been fiddling with this recipe for some time and I think you will find it a delicious (and EASY!) GF version if you ever experienced it there. 

4 cups frozen hashbrowns
2 cups shredded cheese (recommend a mild or colby)
1/4 cup minced onion
1 cup milk
1 teaspoon GF beef bouillon or GF dry onion soup mix
2 Tablespoons butter or margarine
dash of garlic powder
dash (or two) of GF all-purpose seasoning


Combine all ingredients in large bowl EXCEPT for the butter. Melt butter on high heat. Add ingredients. Simmer about five minutes or until cheese is melted, stirring frequently. 
Pour into 2 qt. casserole dish and bake 35-40 min. at 400 degrees. 
This makes about four healthy servings so if you eat as much as I do of it or if you have a large family, double it up! 
Also tastes great with ham pieces mixed in. (Although you may want to decrease the cheese if you add ham because it adds grease).
