Quinoa is a highly nutritious option for those on a GF diet, and is inherently gluten-free.

However, the latest study by Zevallos and co-workers shows that certain varieties of quinoa are extremely potent in causing an immune response on CD-derived cells and tissues, even though they register as "gluten-free" in a typical ELISA assay.
While the current gluten assays are a useful tool, this work shows that they may not be sufficient to ensure safety of all foods for celiacs:
