A lot of Celiacs seem to be hunting for news of an effective treatment
or a cure for the disease, and neither of those is likely to emerge
anytime soon. Meanwhile perhaps we could focus on questions that
researchers are more likely to be able to answer, such as why are  some
Celiacs asymptomatic and  what is the difference at gut level. Is there
some very low level of gluten that Celiacs would be able to  tolerate
and if so how could we safely test for it. Do different people with the
disease have widely varying sensitivity to gluten.  If we could get
reliable answers to those questions and if there was some way to know
the quantity of gluten in a given food or beverage, some Celiacs might
decide that it would be safe to indulge in consumption of a gluten
containing food once in a while. Something like drinking a glass of beer
at Christmas would be a good example of what I mean. Before you flame me
please understand that I am not encouraging Celiacs to violate their
diets and I am always very strict in avoiding the bad stuff in my diet.
