Gayle,
I just read your description of the behavioral changes you and your
son incur after eating gluten...irrational anger, general fuzzy
headedness, shakey-hungry, slow reading, etc.

This sounds like 'hypoglycemia' [low blood sugar] to me.  Before I
knew I had a gluten intolerance, I used to eat various cereals for
breakfast.  Usually, after maybe 4 hours had past, I would slip into
hypoglycemia and get the symptoms as you described.  Have you been
checked for such a thing?
