I was not going to post a summary for this question, but the many
requests I received to forward the information has lead me to do this.
Most celiac's who responded said that they would not risk doing a gluten
challenge because they feel so much better being gluten free.

Many wrote and described their horrible experiences associated with
trying a gluten challenge.

However no one really answered my question on how long I should leave her
on the diet before attempting to reintroduce her to gluten again. So I
took the question to another doctor, and he said to keep her strictly gf
for four to six months before expecting to see any results.His reasoning
for this was it takes months even years for damage to occur. Therefore it
is feasible to think it could take months even years for your body to
heal itself. If however in 6 months there is no improvement at all you
should look to potenially other problems like a milk intolerance.
