A point in regards to some posts I have already received.

I have been following the GF diet for 5+ years and understand celiac disease
and ramifications of not following a GF diet.  My son, diagnosed at 20 mths,
now 7+,  is a "severe celiac" therefore we follow a strict GF diet.  We are
both biopsy diagnosed.

I understand it is healthier in that a celiac cannot tolerate gluten and
therefore must follow a GF diet, but there seemed to be an inference that
the diet we follow is healthier than a "normal" persons diet.  What would a
"normal" person gain from following a GF diet?

or

Is the diet healthier because a change had to be made from eating fast foods
and prepared foods to "fresh", unadulterated foods, as in fresh meat,
veggies and fruits?
