 Brown sauces with soy sauce are only ONE part of Chinese cuisine.
 Look for recipes with white sauces,, egg sauces etc.  I have found the
 best source of Chinese recipes is Gloria Bley Miller's book A THOUSAND
 RECIPE CHINESE COOKBOOK    .  It has been in print forever [I bought
 my first copy in Taiwan more than 30 yearts ago] amd os available in
 paperback.

 btw, many who get a reaction from take out Chinese, may not be aware
 that Chicken broth is used as a base....and it is often College Inn,
 which is not gf.
