I received a few responses.  Sounds like it should be pretty easy to find
Gf Food in the Phoenix/Sedona/Flagstaff area.  Here is what I found out:

*Wild Oats in Phoenix at Thunderbird and Tatum
*many Trader Joe's- just ask around
*Smith's Food Kings-grocery store- many GF items
*Health food store in Kingman
*Algertson's in area- Abigail's website has GF list
*Wild Oats in Scottsdale
*Basha's Market on 89A in Sedona- bread, crackers, cookies, pasta
*A few people shared that many restaurants were accomodating.  They did
     not remember names though.
**Flagstaff- New Frontiers- possibly on I-40... also possibly Cattleman's
     Club restauraunt in Sedona would be a place to try
*Finally-  You can go to archives and a post dated June 15, 2000 gives
another summary of GF travel in Arizona.

I hope this reaches those of you who asked for it before you leave on your
