Vance made a comment that brings up a question that I have had for
awhile.  Do celiacs have trouble absorbing certain items even if they
have been on a strict GF diet?   If a celiac is on a GF diet (and
would be sensitive enough to know if any gluten was getting by),
would the intestines then recover to the state of a non celiac and be
able to absorb everything needed?
