We found this book recently and have given it as a gift to some of our
Restaurateur friends.  They've commented on how informative and helpful it
is in Kitchen Management and Menu Creation for People with Food
Allergies.   They focus on all types of allergies, sensitivities and how to
work with them, while protecting the consumer.
