SUBJECT:     Re: CSA and cocoa 

A couple of recent postings have indicated incorrect information about CSA and cocoa treated with alkali. 

On page 113 in the Glossary section of CSA's most recent Cooperative Gluten-Free Commercial Products Listing, printed in October 2002, next to the "ACCEPTABLE FOR CELIACS SYMBOL" it states 

    "cocoa.    It is derived from cacao beans or cocoa beans. 
     Dutch cocoa is the treating of cocoa with alkali to balance the 
     PH levels and remove cocoa oil." 

All sections of this publication are reviewed yearly to ensure they include the most current information available.  Editions prior to 2002 may contain material which has been revised.
