I would like to apologize to anyone that I might have offended with my comments
about people on this list having a lack of understanding of basic chemistry.
This was not meant as an insult. I realize that many of the people on this list
do understand basic food chemistry. However, some of the misinformation on this
list leads me to conclude that many do not. I suppose that I am frustrated
because many people who read this list take every comment very seriously and may
abstain from eating things which are gluten free. I eat foods containing
distilled vinegar, mono and diglycerides, hydrogenated vegetable oil, glucose
syrup etc, etc, and I drink distilled alcohol derived from grain. I have never
had a reaction to these substances and my biopsies have been completely normal
since I have been on this diet. This is my own personal experience. Others may
have reactions to these substances or other substances which are considered
gluten free. Can we attribute every GI reaction to gluten? I think everyone has
to decide for themselves what they can and cannot eat. If it makes you sick
don't eat it.

Anyway, thanks for listening. I joined this group because I thought it would be
nice to talk with other people who have CD and to share experiences with them. I
do enjoy that aspect of the group and will probably not get involved in any more
heated debates regarding the gluten free status of foods. I have come to realize
that many of us have different reations to different substances and what is good
for some of us may not be good for others.
