1)      Maybe once she gets to the various restaurants, she can speak directly with the managers and try to find something gluten free for her daughter. Breakfasts shouldn't be too difficult, she could bring granola bars, cereal, etc. or eat eggs, bacon, fruit & yogurt at the buffets/restaurants.   I would stock up on "Go Picnic" meals (gluten free "lunchables" but they don't need to be refrigerated), for lunches.  Pack some "Jiff To Go" individual peanut butter cups with apples, pretzels, or rice cakes.   Dinner will definitely be the hardest part!



2)      Wonder if the mother can contact the deli's to make arrangements?  I would recommend she visits Golden Corral's Website for allergy information and pin point foods her daughter can have as long as the buffet is "neat" and "clean" with no visible signs of contamination.  She can also ask if the food can be served straight from the kitchen (as long as the kitchen staff understands contamination) before it's placed on the buffet, where utensils can be shared with gluten containing foods.

I would recommend the mom contact the hotel and see what accommodations they can provide.  They may be able to pack her a boxed lunch.  I would also see if there is a local store close to the area where she is staying and visiting to purchase gf products so she doesn't have to carry all the food with her.

Foods that are good for the bus would be your typical "travels well without refrigeration" foods: trail mix, cereal/protein bars, nuts/seeds, fruit, homemade peanut butter crackers,  vacuumed sealed tuna, nut butters, string cheese and yogurt can be easily put in a small hand held cooler.

I would recommend the mom brings a toaster for her daughter, along with bagels.  Bagels are great for breakfast.  She can have a peanut butter bagel or have the hotel's restaurant cook an egg and canadian bacon so she can have a breakfast sandwich.  I'm sure they can even make her tuna or egg salad.

There are 2 new bread products that are shelf stable, travel well, and taste great.

Rudi's new tortilla wraps comes in 3 varieties (plain, spinach, and fiesta).  They are shelf stable up to 10 days.  Mine have been sitting on my counter for  6 days now and aren't crumbling or tearing.

The other product is Googbye Gluten Bread.  It has limited availability though.  The rep told me he believes It's being test marketed in 3 states Pennsylvania, Ohio, and St. Lois.  You can find more information on their website http://goodbyeglutenbakeries.com.  This bread doesn't need toasted and doesn't crumble.
