Dear Listmates,

The inspiration was the August King Arthur Flour's Bakers Catalogue,
and the result was a delicious darkish bread with a wonderful aroma
that tasted great toasted and made hot sandwiches that did not crumble
or fall apart. You can check out the recipe here

notes that I left in the recipe, the bread is still a work in
progress. But even if it turns out that I can't get the texture I
ultimately want, the existing taste and flexibility makes this bread
well worth eating.

The downside is that you may have to go shopping for expensive flours
that you don't normally have around your home - Quinoa and Amaranth.
The amaranth contributes to the great taste. Quinoa brings out the
undertones and contributes to the bread's "finish."
