The February issue of Martha Stewart's Living has an excellent recipe for
polenta lasagne which is entirely gluten free except for the flour in the
bechamel sauce.  I substituted regular white rice flour for the all-purpose
flour in her recipe and it worked perfectly...and was delicious!  It is
currently on the newsstands.
