HI Ann,

Good post. Thanks. There are a number of good and understandable articles on fats coming from this same direction at

http://www.westonaprice.org/knowyourfats/index.html

For a rundown on the background of this info here are a couple of links explaining where the information originated. A dentist travelled the world back in the '30's, studying isolated cultures and their diets and health and his findings were startling, sobering, and relevant.

These peoples also soaked their grains and seeds for long periods of times. They used sourdoughs to raise them, and one of those sourdoughs is being studied for it's effects on gluten. It's too soon to draw conclusions though. The 11 major differences he found in those cultures dietary customs are enumerated in the second link above this paragraph.

Thanks again for posting,
Olive Kaiser

There was an interesting comment on the Easdes low carb cooking show =
about trans fats. They specifically mentioned that CANOLA and SOY OILS =
were NOT good choices. In the processing, the fat turns to a trans fat. =
They recommend using butter or olive oil.

It's interesting that when I was first diagnosed 15 years ago, canola was =
a big no-no. The Canadian Sprue assoc said that the rapeseed [canola] =
was grown on fallow wheat fields and was contaminated from the seed up. =
Then that fell out of fashion, and now I hear that's back. Anyway, it's =
  bad for you...don't use it.
