Anerica's Test Kitchen has had several shows dealing with how to successfully bread meats which will apply to gf items as well
first, meat must be dry. pat with paper towels
then, dredge meat with a fine flour. rice flour works well...sweet or reg
next, dip in an egg bath...one or two beaten eggs with a tablespoon or two of water and flavorings...some dijon musard, herbs, parm cheese etc plus salt and pepper
then, roll in bread crumbs, either fresh or toasted, ground almonds or other nuts, parmesan cheese mixed with a couple of tablespoons of rice flour, etc, along with dry onion powder and/or garlic powder...do not use fresh becaulse they will burn.
a trick is then to place them on a rack over a sheet pan and place in frig for a half hour. meat will pull together and coating will set.
bake on rack on sheet pan or fry.
