I found a neat little book called "The Gluten Free Diet" (Rawcliffe, P.
& James, R.) which contains a recipe for chocolate glace icing as part of
profiteroles. I checked the GFDIET file and didn't see icing sugar on
there specifically unless I missed it, but I seem to recall that icing
sugar (not the same as confectioner's sugar) is not gf-at least not in
Canada. Is icing sugar in fact gf? BTW, this book (1997) has some really
good recipes for pastry that I know are gf and don't take a lot of effort.
I got my copy from the local library.

Thanks!
