Does anyone have any suggestions?  I will be helping provide meals for a newly diagnosed friend who is having open heart surgery.  She and her son (age 16) were just diagnosed...the son doesn't know that he has celiacs yet.  Since they are so new at this AND having other medical issues- her best friend and I are planning on doing meals for their family of 3. The meals need to be Gluten free and Casein free as well.  We are looking for meals that would freeze well or any other convince things that would be good to have on hand for them? IF you have any suggestions of things that have worked well for you or anyone you know I would welcome any suggestion(s) you have!  I will summarize as I think this could be valuable information.
