This is a 2-page information sheet that provides an overview of the gluten free status of many common cuisines. The guide also provides suggestions for popular dishes in each cuisine that are likely to be gluten free (or easily made gluten free).

This is an excellent starting point for learning more about a new cuisine, or a great refresher for getting up to speed on the big issues before visiting a new restaurant.

The guide covers Chinese, Indian, Japanese, Mexican, and Thai cuisines.
