Dear List,

here's a simple egg replacer I read about at some point:

1. grind some flax seed in a blender or coffee grinder

2. add 3 parts water to 1 part ground flax seed and boil mixture for
about five minutes.

In a recipe for GF cornbread my wife recently used about 4 tablespoons
to replace 3 eggs, but says that maybe less would also be o.k. Bread was
good. The flax added an interesting nutty flavor.

This egg replacer didn't work very well for pancakes.
