A sneak peek at one of the recipes:  


Chocolate Pie Crust


ingredients:

1 box Enjoy Life® soft-baked Double Chocolate Brownie cookies

1/4 cup brown rice flour

2 tablespoons natural cocoa powder

2 tablespoons tapioca flour/starch

1/4 cup and 1 tablespoon Spectrum Organic Shortening

equipment:  

 9-inch pie plate

directions:

1.) Preheat oven to 350°F, or gas mark 4. Lightly grease a 9-inch pie plate.

2.) In a food processor, process the cookies into crumbs. You should have
about 1 1/3 cups of crumbs. Add brown rice flour, cocoa powder and tapioca
flour/starch and pulse until combined.

3.) Cut shortening into small pieces. Add to cookie mixture and pulse to
combine.

4.) Press crumb mixture into prepared pie plate. Bake for 9-10 minutes, or
until the crust feels a little firm to the touch (it will firm up as it
cools). Crust will not brown a lot; do not over bake. Cool completely before
filling. Store unfilled pie crusts covered in the refrigerator or freezer.


 Yield: 1 pie crust
