Thank you to everyone who responded to my posting that IHOP does indeed add pancake batter to omelets. I had confirmed that fact with an IHOP manager.

Here's a summary of listserve responses I received:
1) Many people were shocked and angry, as I was, to discover that IHOP does this.
2) One person confirmed getting extremely sick from eating an IHOP omelet.
3) Two people kindly responded to my question about Denny's, saying that Denny's does not add anything such as batter or flour to their omelets, however ask for a clean fry pan to avoid cross-contamination.
4) Other people said they had checked with similar types of restaurants and had not found any batter, flour or yeast added to omelets, so maybe it's limited to IHOP.

Thank you to the person who originally posted the issue about IHOP omelets on our listserve. I would have never thought to confirm with an IHOP manager otherwise. I will write a letter to the IHOP corporate offices explaining how they are putting the health of celiacs, those with wheat allergies, etc. at risk due to their practices.
