Claire asked about Sylvan Border Farms which uses quinoa and amaranth in
it's gluten-free flour mix.  Neither of these are closely related to wheat
and are indeed safe for celiacs, although there may be individuals who have
sensitivity to them for other reasons.  The Sylvan Border Farms is very
careful about the source of all ingredients.  These products are more
nutritious than rice flour alone, plus they're very tasty.  I especially
like the dark bread. It takes like pumpernickel of old.
