Thank you everyone for your comments on hospital meals.
Out of more than 60 replies the overwhelming consensus was that my husband
and I should pack a food box.
Three responses did encourage me to work with the dieticians as they do
know about celiac disease...mistakes tend to happen with kitchen staff.
(boy did I hear some kitchen mistake stories!)
At least 8 people encouraged me to gently educate the dietician further.
There were several good suggestions on where to download or send for
information that can be given to the dietician. One response had this info:

"The dietitian should already be aware of your needs, but you will still
want to be prepared by bringing along helpful information, i.e. gluten-free
product listings, forbidden ingredient listing
(www.celiac.com/forbiden.html), gluten-free medicine listings. The
Celiac Sprue Association has a Health Professional Packet available free of
charge by calling 402-558-0600 or ordering online at
http://www.csaceliacs.org/order.html . The Gluten Intolerance Group also
has a Hospital Guide. available for;$15. You can Order by calling
206-246-6652 or online from http://www.gluten.net/products.asp"

I contacted the hospital and they do have a refrigerator that we can use
(although one new mom said that her yogurt and fruit got eaten...but not by
her!)

I have ordered several "heat and eat meals" from the Gluten Free Pantry.
With additional crackers and fruit and corn pops cereal I should be fine.

This listserve is a goldmine of valuable information.

Thank you all for your blessings and kind wishes!

Lauren, Noel and Haley Carlson (and player to be announced later!) :-)
