Did any one mention that methyl cellulose makes a good substitute for
xantham and guar gum (both of which sometimes have gluten)?  You can get
m cellulose from your pharmacist-  expensive unless you want to buy a
lot of it.  Maines North Creek NY.

One source of cellulose is wheat stalk and wheat bran.  A google search
will turn up several references.
