here is a summary on cornstarch vs. potato starch
experience:


Two respondants said corn starch and potato starch are
totally interchangeable with no noticable difference

One respondant said corn starch makes stuff lighter in
texture, while potato starch gives goods a chewy
texture

One respondant said corn starch is slicker in sauces
while potato starch is heartier and tastes more wheat
like in sauces

One respondant finds success substituting tapioca
starch for both corn starch and potato starch

One respondant said she couldn't explain the
difference between corn starch and potato starch but
prefers potato starch
