Thanks to all who responded to my questions.

I have not been able to find a new source for the animal shaped pasta.

Six people responded to my question about Tritamyl bread mix. One said
products with wheat starch are not suitable for celiacs. One said the
bread has a nice consistency and makes good toast, but doesn't keep well,
even frozen. One said it has a texture similar to rice breads, i.e.,
crumbly. The other three were very positive about it, and said it keeps
well in or out of the fridge for a week or more.
