Have a great Gluten-Free Holiday!  The traditional foods my family eats at this time of year has only gotten better as we all cook gluten free.

Remember those yummy pecan tarts that are served during the holidays?  They are just as good gluten free. The Ruby Range flour mix gives these a rich taste similar to wheat.

Tarts

Cream Cheese Gluten Free Pastry Dough

                Recipe makes 24, double for 48

                

                1/2 cup 

                4 oz cream cheese

                1 cup Ruby Range Pancake Mix or Basic Mix

                

                Cream together butter and cream cheese until well blended.  Stir in flour.  Cover and chill this mixture for at least an hour.  Shape the dough in to 24 balls.  Press ball into 1 1/2 inch muffin tins.

 

                Fill 2/3s full with desired filling.  Bake at 375 oven for 10-15 minutes.      Cool in the pan before removing.

 

Traditional Pecan Filling

1 lightly beaten egg

1 teaspoon melted butter

3/4 cup dark brown sugar

1/2 cup chopped pecans or walnuts

 

Mix egg, melted butter, sugar and nuts.  Fill pastry cups.  Be careful not to fill too full as they will bubble over the edge of the pastry cup.

 

Bake in a 375 oven for 10 - 12 minutes.
