I've received several emails questioning the use of coconut milk....the Drs Eades on their pbs show lowcarbcookrx have stated flat out the coconut is a goodie.  they recomment using coconut fat to fry in....it is very heat tolerant.

the whole cholestrol thing has been turned topsy-turvy.  Foods that were thought to be no good are now recommended.  Remember when shrimp and eggs were no-no's?  now you can eat as much as you like.  Coconut is high in many nutrients 

Eades say not to worry about the cholestrol...your body makes much more than you every ingest.

the thing to watch out for is SATURATED FATS.   CANOLA AND VEGGIE OILS..which are made of soybeans...are superheated in production which TURNS THEM INO SATURATED FATS....SO STAY AWAY FROM CANOLA AND VEGGIE OIL....btw, Pam is made with canola oil
