Wow! 38 responses... a lot of people using corn tortillas in a  variety of ways. I went out and purchased a quesadilla maker at kohls for 14.99. I took a  tortilla put grilled chicken, shredded chese and then put a tortilla on top. Awesome served with salsa and sour cream. here are some other  suggestions that I have not tried yet. I would say 90 percent of responses were to make quesadillas, mostly in a pan vs an actual quesadilla maker. 
 enjoy making Tortilla Soup. Instead of using chips,  I like to buy corn tortillas and cut them up into thin 3 inch long strips with a pizza cutter (like in the restaurants).  I bake them for about 10-15 minues in the oven to dry them out.  After they've cooled, I put a hand full in the bowl along with a slice of avocado and cheese and ladel soup on top.  It's wonderful! the BEST way is to make enchiladas, but so far I
haven't done that.  You can layer them in casseroles, they cook soft, but I
love the flavor.  I have torn them up and thrown them into stuff I was
cooking with tomato sauce in it, it thickens and gives calories and flavor.
I do a lot of very quick and informal "what have we got laying around the
kitchen or out in the garden" kind of cooking, and tortillas can be handy
because you don't have to have rice already cooked.
    I've fried up eggs and sausage and wrapped them in tortillas, or served
the tortillas with them.  They're certainly compatible with all the things
we think of as Mexican, tomatoes, peppers, tomatillos, summer squashes,
beans, and Mexican herbs. 
Place corn tortillas on a flat baking sheet.  Spread a small amount of 
ketchup on one half and top with pepperoni or  salami,  sliced or dried 
tomatoes, smoked peppers and cheese.

Grill in a 350 degree oven until cheese melts.  As soon as you remove them 
from the oven fold the empty half of the tortilla over the fillings.
just spread them with refried beans and grated cheese (cheddar or monterey
jack) and cook up quesadillas.  I use a nonstick pan and spray with pan to
make it low fat.  This our version of "grilled cheese"
 make tostados with them.Cook the tortillas in the oven until crisp. Remove from oven and cover with refried beans, sauteed ground beef, lettuce and cheese. Put back in oven until cheese melts.
