A good milk substitute is Vitamite.  It comes in cartons in the milk section
of the market or in powdered form.  The company is Diehl Specialties and they

I have found rice paper Spring Roll Wrappers to be an easy way to fix
one-handed food.  They can be soaked for a few seconds in lukewarm water and
wrapped around an infinite variety of things.  Some precautions: Don't use
hot water or let them sit in the water too long.  They will fall apart.  I
put them in two or three at a time to soak.  Look for them in Oriental food
stores.  The ingredients are rice, water, and salt.

My favorite recipe is to use one part cooked brown rice and one part cooked
mixed vegetables(broccolli, sucatash, etc.), add some soy cheese and spices
like garlic, salt, pepper, and one chopped onion.  Mix this well and put a
spoonful on each wrapper.  Fold the wrapper around the filling and fry it in
a little oil in a skillet just until golden.  If it gets too brown, it gets
tough, but is still delicious.  They are very easy to store in the
refrigerator and heat up in the microwave and can be eaten with one hand.

A good cookie recipe:
Delights
1/2 c. margarine                    1/2 tsp. xanthun gum
2 Tbs. sugar                           1c. rice flour
1 tsp. vanilla                         1 c. finely chopped walnuts
powdered sugar

Thoroughly mix margarine, sugar, and vanilla.  Gradually add other
ingredients.  Chill for at least 1 hour.
Heat oven to 350 F.  Shape dough into marble size balls.  You need them small
enough to pop into your mouth all at once and they expand a little during
baking.  Bake on ungreased cookie sheet for 10-15 minutes or until firm, but
not browned.

Roll GENTLY in powdered sugar and put back on the cookie sheet to cool.  Roll
again in the powdered sugar.  They are better if left to sit overnight.
