                              ....  I've never seen a recipe
  for mochi before, however, and would love to find one or
  to be referred to a Japanese cookbook that might help.

A friend of mine who lives in Hawaii gave me this recipe. I don't know if it
is what you are thinking of or not. I haven't tried it yet.

Colleen.

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
                                 Butter Mochi
1/2 c. Butter
1 pkg. Mochiko (rice flour) - 16 oz.  (I used about 2 1/2 to 3 cups because the
     the coconut milk was too runny)
2 Tbsp. baking powder
1 1/2 c. milk  (you could decrease this instead of adding extra flour)
5 eggs
1 can coconut milk
2 1/2 c. sugar
1 tsp. vanilla
Melt butter and set aside.  Mix all other ingredients, then add butter.  Grease
9x13 pan (reg. long rectangle).  Pour in mixture.  Bake for 1 hour 350 F.
