I have never seen this mentioned or discussed anywhere: Have any of you had
any experience with finding accomodations in any old age or nursing homes
for someone with Celiac and/or lactose intolerance?

I'm also wondering what you do about eating when you have to go the
hospital for a few days. I've told them I'm celiac and lactose intolerant
at a large hospital (Swedish hospital in Seattle) and they didn't seem to
have much of a clue what to do about that other than offering to let  pick
from what they  offered, which doesn't tell you how they're made. I simply
made sandwiches and had them put them in the frig for when I couldn't find
something else to eat.
