Hi,

I only received one response which had a recipe for baking Gluten free Nan's. I did receive lot of requests from
people who enjoy Indian food and would love to be able to cook Gluten free Nan/Roti.

Here is the recipe:


This is from a cookbook - "healthy gluten-free eating" by Darina Allen, R. Kearney.



150 ml tepid milk

2tsp caster sugar

2tsp dried active yeast

275g (10oz) rice flour

60z tapioca flour

1/2 tsp salt

 1 tsp gluten free baking powder

2 tsp veg oil

150ml naturel yogurt

1 egg, lighly beaten

1 tsp xanthan gum



- into bowl , pour tepid milk add 1 tsp sugar, sprinkle yeast, sit bowl in warm place 4-5 mins



- Sift flours, Xanthan gum, salt, b.pwder into bowlor food mixer. Add remaining sugar, oil, yogurt, egg. Mix until
smooth.



preheat oven highest setting.

use heavy baking tray.



- Make dough into 6 equal sized balls. roll ball into tear shape, use rice flour if necessary.



Remove hot tray from oven, slap on naans, put into the oven for 3 mins. naan should puff up.



place tray under hot grill for 30 secs, for extra browning.
