Thanks to the perceptive listers who questioned the amount of flour in my recipe.

You are correct - the recipe should contain 1 c rice flour, 1 c tapioca flour and 1 tsp Zanthan gum.

However, as a test, I made waffles this morning using just a total of one cup of flour and they are very nice.  They are extremely light and crisp. The batter is quite runny so you use less of it per waffle.

The moral of this is that you could use one cup, a cup and a half or two cups and vary the waffles to suite your taste.  All will be successful.
