Thanks everyone.  "Potato starch" is the same as "potato starch flour" but these
are NOT the same as "potato flour," which is heavier and used less frequently.
Glad that was mentioned, a woman working at my local health food store tried to
tell me potato flour was the same as potato starch.  So the key word is
"starch."  Diane
