Sorry for the delay. Here is a summary of the miso information I received:

  ****
This company sells a chick pea miso (garbanzo) : It is gluten free and soy free.
  https://www.great-eastern-sun.com

They also sell a brown rice miso that does have soy - (which is probably partially "digested" by the miso process anyway.) It is GF and thus suitable for those who can tolerate soy.

I made some miso last spring, got my koji starter from Gem cultures in CA. They assured me there was no gluten in the starter. The miso I made is very good, as good as any you can buy, and was very cheap to make. Good luck! If you really can't find any miso, cheat and put a bit of soy sauce in. It won't be the same texture, but the flavor will be close enough.

I bought Cold Mountain Mellow White Miso. The container says "Gluten Free."

I found organic miso that looks like it's glutenfree: Mellow White Miso Master Organic Soy Paste. Their website is www.great-eastern-sun.com The 16 oz. plastic carton says it has only: organic soybeans, organic rice koji, traditionally made sun-dried sea salt, Blue Ridge Mountain well water, & koji spores. It costs $6.41. I think I got it at Central Market. I've been eating it without problems. I wrote to them today just to be sure. They do have other kinds of miso that have barley in them, so I wonder about cross-contamination. It's been okay so far.

Buy some miso powder and make a paste out of it.

The main ingredients of Sweet White Miso are soybeans and brown rice. There is no wheat, barley, rye or oats in this miso.

Be careful about misos because if made in Japan-- many actually come from Japan-- they throw barley flour on the fermenting koji. Not listed on label. All the major brands come from Japan--even though U.S company.

just got this and it is safe and good:

Thank you for your e-mail.

Our AWASE MISO has not Wheat or Gluten in it, and also our miso products ("soybean paste") have not Wheat and gluten. However a part of our "instant miso soup" have wheat or gluten. Please check the ingridients list on the package.

Again your interest in our product is much appreciated.

Sincerely yours,

Miyasaka Jozo Co., Ltd. (Tokyo, Japan)

The miso I have says: Miso-cup (savory soup with seaweed). There are 8, 8 oz. servings in 4 envelopes. It is put out by Edward & Sons and says gluten free on the back. I use it in soups and other dishes occasionally. It says to just add hot water. It is in powder form. Ingredients are soybeans, cultured rice, salt, onions, wakame seaweed. Contains no animal products, sugar, preservatives, hydrogenated fats, MSG or chemical additives, and is gluten free. I purchased it at our local Wild Oats store but other health food stores might have it too.
