I for one applaud Kikkoman's efforts in testing and identifying wheat
proteins in their finished product. From their letter, it seems that they
have gone to the trouble and expense to conduct their own research and to
review the research of other's to assist in answering this question.

 

We all know that there are different sensitivities and different physical
reactions to gluten. Poor Valerie in Tacoma had a reaction by being in the
same household with toddlers and gluten filled kitchen.

 

There was no mention in Kikkoman's response about mis-labeling. Their soy
sauce clearly identifies wheat in the content. And there is no standard yet
in USA as to the definition of gluten-free.

 

It's up to each individual to assess their health and draw there on lines
and boundaries.
