Dear Listmates,
I came across this one and it is easy.

Mi- Del Ginger Snaps
Edy's Whole Fruit Sorbet-Peach

option 1:  Place a small scoop of sorbet on a ginger snap.  Put another snap on top and make an ice cream sandwich

option2:  Make a  cookie crumb crust out of the ginger snaps. Reserve 1T of cookie crumbs for garnish.  Spread the peach sorbet in the crust. Sprinkle the reserved crumbs on top.  Freeze till ready to serve. Garnish with mint leaves.
