I have just searched the listserver for couscous and no match was found.

What I need is the best substitute for couscous. Is it quinoa or
pearled jowar? If anyone has any suggestions, recipes, ways of
preparing not to overcook, I will be most appreciative.

I need to take with me for weekend out of town where all the guests cook
(gourmet meals). Everyone is very accommodating however, it always
works best if I bring my own substitute. In this case that would be for
couscous.

Thank you very very much, Sarah in Washington, D.C.
