Gluten is pervasive and pops up in the most unexpected places.  E.g., natural
flavors, especially in tomato sauce products, usually denotes an additive
containing MSG that contains gluten.  Paprika in restaurants often contains
flour.  I believe mono- and di-glycerides can contain gluten.  It is very
easy to eat gluten inadvertently even if one has all the basic sources down.
By continuing to monitor this list, you will see these obscure sources
