Hi Everyone,

The Gluten-Free Nutrition Guide (McGraw-Hill) is now available on Amazon in both paperback and Kindle editions. It is also available through bookstores.

I have been researching and writing about celiac disease and the gluten-free diet for twelve years. During this time, my work has focused on the controversial aspects of the diet, including whether oats and wheat starch should be allowed, as well as the nutritional quality of the diet. While much attention has been paid to what foods can and cannot be included in a gluten-free diet, little attention has been paid to whether the diet is nutritious. In fact, a gluten-free diet can be very healthful, but certain nutrients might be lacking. In 2005, my colleagues and I conducted a study whose results indicated that many gluten-free diets lack necessary levels of fiber, iron, calcium, and B vitamins. The Gluten-Free Nutrition Guide will show you how to make sure these vital nutrients make their way into your own diet.

The Gluten-Free Nutrition Guide provides the basics of the gluten-free diet, research and evidenced-based information about the more controversial aspects of the diet, such as oats and wheat starch, information on ingredient labeling and gluten-free labeling of food products, information on potential nutritional pitfalls of the gluten-free diet and how to ensure a healthy diet, and recipes using gluten-free whole grains from celiac disease experts.
