In response to the gf tuna postings, I contacted StarKist again in an effort
to obtain more info re the ingredients in thier tuna in water (which we all
know contains  more than water).  Their representative said that the
vegetable broth contains at least 2 of the following dehydrated vegetables :
beans, cabbage, celery, carrots, garlic, onions, peas, parsley, green or red
peppers.  It is rehydrated, she said, with water only.
As per some of your suspicions, the hydrolized casein is made from a "dairy
derivative" (that's as specific an answer as I could get).  This info made me
rethink this product, since cabbage is  something that definitely does not
agree with me, and there's no way to know which vegetables are in the can you
buy, so the vegetable broth may not be friendly to my gut.  The
representative told me that if I wanted ONLY tuna and water, I should
purchase  their low fat/low sodium tuna, which contains only those
ingredients.
 
I'm new at this, but I guess I'm learning fast to ask more specific
questions!  I'm enjoying sharing with all of you-- your postings and the
wealth of info I've obtained in the past few weeks has made understanding and
adjusting to this diet so much easier.
